Peaches in Ginger Syrup

As summer is still in high swing and fresh peaches are in abundance here is a super easy healthy "fresh" fruit dessert to try for your summer get together. There is nothing like fresh fruit and farm fresh peaches are one of my favorites!

Start to finish: 40 min

Servings: Makes 8 servings.

Ingredients

  • 3/4 cup dry white wine
  • 3/4 cup water
  • 3/4 cup sugar
  • 3/4 (2-inch) piece fresh ginger, coarsely grated
  • 3/4 lb peaches (8)
  • 2 tablespoons fresh lemon juice

Preparation

Simmer wine, water, sugar, and ginger, stirring occasionally, until reduced to about 3/4 cup, about 15 minutes.

While syrup is simmering, slice peaches and toss with lemon juice.

Pour hot syrup through a fine sieve onto peaches, then stir.

Let stand 20 minutes.

Cooks' note:
Peaches can stand in syrup, covered, up to 2 hours at room temperature.
